Tasty pickles
Onion pickle
Ingredients:
2 kg small onions, salt and black pepper and red chili powder as per taste, 100 gm ginger, vinegar as required
Method:
Peel off the onions and wash them. Pour them into a utensil and add vinegar to them. Bring them to a boil on low flame. Afterwards take it off from the flame and pour them into clean bottle.
After 24 hours, add all the masale to it with some vinegar on the top.
Keep mixing it on daily basis and keep under the sun. Your onion pickle is ready.
Orange pickle
Ingredients:
20 oranges, 100 gm lemon juice, 50 gm white jeera, 50 gm salt, 50 gm pipali, 40 gm black jeera, 40 gm sonth, 40 gm black pepper, 40 gm coriander powder, 60 gm cardamom, 20 cloves, 20 gm javakhar, pinch of hing, daalchini, salt to taste
Method:
Peel off the oranges and them cut them into 4 parts in such a manner they remain joined from the bottom.
Make a nice powder of sonth, daalchni, pipali, salt, cloves, white jeera, balck peper, hing, black pepper, rock salt, cardamom and fill them in the oranges.
Pour all the oranges in the utensil and place on the flame. Cook for 20 minutes and then add javakhaar, salt and lemon juice to it. Bring 2-3 boils in it. Take it off from the flame.
After 6 hours, pour the prepare achhaar in a clean container.
Your orange pickle is ready.
Green chilies pickle
Ingredients:
50 gm green chilies, required quantity of curd, salt, mustard seeds, amchoor, vinegar, and mustard oil
Method:
Make a long slit in green chilies.
Prepare a mixture of salt, amchoor, mustard seeds, turmeric powder and fill them in chilies.
Pour the left powdered mixture with green chilies in a container.
Pour the mustard oil in the container from above and mix. Also add vinegar.
Keep the container under the sun on daily basis and start eating the pickle from the third day of preparation.
