Tasty pickle recipes

Hey people, here are some spicy and mouth-watering pickle recipes for you all!

Paneer pickle
Ingredients

300 gm paneer, 1 tbsp refined oil, 1 capsicum, 1 tsp red chili powder, ½ tsp turmeric powder, 1 tsp roasted methi dana paste, 1 tsp sauf powder, 1 tbsp ginger piece, 1 tbsp salt, 1 cup vinegar, 1 tbsp mustard powder

Method
Dice the paneer into 1×1 inch pieces.
De-seed the capsicum and chop it into big pieces.
Heat the oil in pan and fry the paneer pieces till their color changes to golden brown.
Also fry the capsicum pieces in the same oil.
Mix the salt, chili, turmeric powder, sauf and methi powder together with paneer and capsicum pieces and keep them aside to cool down.
When they cool down, fill them into the container and pour the vinegar on it.
Your paneer pickle is ready.

Baigan and kachalloo achhar
Ingredients

½ kg brinjal,1 kg kachalloo, 350 gm oil, 2 ½ tbsp salt, 2 tsp red chili powder, 3 tsp turmeric powder, 200 gm mustard seeds powder, 2 tsp black pepper

Method
Pour the kachalloo in a pan and boil them in water on a high falme.when kachalloo gets soft, turn off the flame and keep them aside to cool down. Peel off the skin of kachalloo and chop them into round slices.
Cut the brinjal into 2 halves and then chop them lengthwise. Boil them in another pan and then take them out when they turn soft.
Heat oil in pan and splutter mustard, turmeric, red chilies in it. Also add salt and black pepper. Take them off from flame and let it cool down. Later add to the baigan and kachalloo.mix well.
Pour all the above prepared mixture in a dry container. Your pickle is ready to serve.
