Tasty chutneys prepared from different fruits
Plum chutney
Ingredients:
500 gm plum, 1 kg sugar, 200 gm lemon juice, 2000 gm raisins, 200 gm chuarre, 50 gm mint leaves, 50 gm cardamom, 50 almonds, 50 gm cardamom, 50 balk pepper, 50 gm ginger, salt and red chili powder as per taste
Method:
Wash the plum and soak them in water for a whole night.
Next morning, pour them into a blender and make a nice paste.
Wash and chop the almonds and chuarre.
Also wash the raisins.
Mix ginger, coriander leaves with plum pieces and add sugar to it. Bring this mixture to a boil. Add almonds, raisins and chuarre to this mixture.
Bring at least 3-4 boils and then add masala, salt. Mix again.
Fill it into bottles.
Plum chutney is ready to savor.
Pear chutney
Ingredients:
1 kg pear, 1 kg sugar, 500 gm tamarind, 2 liter vinegar, 125 gm salt, 50 gm black salt, 30 gm red chilies
Method:
Peel off the pears and chop them into long pieces.
Boil these long pieces of pear in a pan till they turn soft.
Pour vinegar and tamarind in a steel pan and boil them on low flame.
Add pear pieces along with sugar. Cook for few more minutes.
Add salt, red chili powder and black pepper to the mixture.
Stir constantly and then take it off from the flame. Fill them into the clean bottles and savor the chutney.
Sweet potato chutney
Ingredients
3 sweet potato, 2 onions, 4 garlic cloves, 2 bunch of mint leaves, 50 gm coconut, 5 green chilies, lemons, jeera, salt to taste
Method
Wash and peel off the sweet potato.
Wash the mint leaves as well.
Peel off garlic and onions. Make a nice paste of coconut along with onions and garlic. Add salt, lemon juice and jeera. Mix everything well. Also add chopped green chilies to the same paste.
Pour all the ingredients again in a blender with sweet potato and blend well.
Pour the chutney in a bowl and savor it with parantha.
