Methi strew
Ingredients:

50 gm methi leaves, 3 chopped onions, 1 tomato, 1 carrot, 1 potato,1/2 cup peas, ½ tsp turmeric powder, 2 chopped green chilies, 50 gm chopped garlic, salt to taste, oil for frying

Method:
Clean the methi leaves and chop them into small pieces.
Chop tomato, onions, potatoes and carrot in small pieces.
Sauté the chopped onions in oil in frying pan. till their color changes to golden brown.
Add turmeric, green chilies and garlic to the pan and sauté them.
Now add tomato to it with salt and methi.
Cook the vegetables on low flame till all of them turn soft.
Serve hot with parantha.

Methi masala
Ingredients

6 chopped tomatoes, 2 tsp chopped coriander leaves, 1 tsp methi seeds, ½ tsp turmeric powder, ½ tsp coriander powder, 1 tsp jeera powder,  8 garlic cloves, 4 green chilies, 1 tsp ghee

Method

Except for tomatoes, make a nice paste of all ingredients.
Heat ghee in a pan and sauté masala in it.
Now add all the tomatoes to it. Cook till tomatoes get soft.
Serve with fish or any other vegetable curry.

Mixed vegetable
Ingredients

500 gm paneer, 4 tbsp almond oil, 1 carrot, 1 potato, 1 tomato, 1 tsp grated ginger, 1 tsp garam masala powder, 1/2 cup roasted badam

Method
Wrap the paneer in a paper napkin, so that all the water inside it gets soaked.
Chop the potatoes and carrots in fine pieces. Also chop tomatoes.
Heat 2 tbsp oil in a non-stick pan, add carrot and potatoes in it and cook.
When both the vegetables get soft, add tomatoes, ginger paste and garam masala powder. Cook without covering with lid for 10 minutes.
Chop paneer in small dices. Add paneer dices to another heated pan. Fry them in oil till they turn golden in color. Add the sautéed vegetables in it. Mix well.
Roast the almonds in another pan and sprinkle them on the prepared mixed veg.
Serve hot.
