Soup-o-mania exotic soup recipes!

Muiligataway soup
Ingredients:
1 cup massor dal, 2 minced medium ionions,2 diced medium carrots,2 diced medium tomatoes,2 tbsp butter,8 curry leaves,4 cups water,1/2 cup coconut milk, salt to taste, sliced fresh lemon,1 inch piece of ginger,1/2 inch piece of turmeric,6 pepper corns,1 kashmiri chili,1 tsp coriander seeds
Method:
Roast and grind ginger, turmeric, pepper corns, Kashmiri chili and coriander leaves to a fine paste. Heat butter and sauté onions. Add dal, carrots, tomatoes, ground paste along with curry leaves, salt, water and boil. When everything turns soft, mash to a pulp and pass through a sieve. Add coconut milk and cook 5 minutes longer. Serve garnished with sliced fresh lemon.
Mixed vegetable soup
Ingredients:
½ cup moong dal, 2 diced medium carrots,1 diced medium potato, 2 diced medium tomatoes, 1 chopped medium onion, 1/4 cup shredded French beans, 5 cups water, 1 tsp corn flour, 1 tbsp butter,1/2 cup milk, salt and pepper to taste, small pieces of fried crisp toast
Method:
Wash all the vegetables and dal. Add water, salt, pepper and boil until everything turns tender. Mash and pass through a sieve. Blend corn flour with melted butter and add to the strained soup. Reheat, add milk and boil 15 minutes longer. Serve garnished with pieces of crisp toast.
Spinach cream soup
Ingredients:
3 medium sprigs spinach, 1 mined medium onion, 2 diced medium tomtoes, 3 cups water, 1 tsp corflour, 1 tbsp butter, 1/2 cup cream, salt and pepper to taste
Method:
Sauté onion in tbsp butter, add spinach (finely chopped), tomatoes, water, salt and pepper. Cook until spinach is tender. Mash and pass through a sieve. Mix corn flour with remaining melted butter and add to strained spinach. Reheat and cook 3 minutes longer. Serve piping hot topped with cream.
