Makhana and dry fruits gravy

Ingredients:

1 ½ cup makhane, ½ cup peas, 10-12 cashews, 10-12 rasins, ¼ cup muskmelon seeds, ¼ cup tomato puree, pinch of hing, 3-4 cardamom, ¾ tsp salt, ¾ tsp powdered red chili, ¾ tsp turmeric powder, 2 tsp coriander powder, ¾ tsp garam masala powder, 3-4 chopped green chilies, 1 tbsp chopped coriander leaves, ½ cup milk cream, oil

Method:

Heat oil in a pan and sauté all the dry fruits in it except for rasins. Later take them out in a bowl.

Heat 2 tbsp oil or ghee in a pan and sauté hing and cardamom in it. Add milk cream and stir-fry. Add salt and other seasonings to it. Add tomato puree at the end.

Pour peas, chopped green chilies and cook. Add fried makhane, rasins and cook again well. Add 2 cups of water and cook well for 5 minutes in a pan.

Add chopped coriander leaves, muskmelon seeds, fried dry fruits and serve hot.

Kaju paneer

Ingredients:

100 gm cashew nuts, 250 gm paneer, 8-10 tomatoes, 2 chopped onions, some coriander leaves, 3-4 chopped green chilies, 2 cup milk, 1 cup curd, 1 tsp salt, ½ tsp red chili powder, ½ tsp garam masala powder, 8-10 tbsp desi ghee

method:

Churn cashew nuts in a blender with milk.

Make a paste of onions and curd in a blender separately.

Make a nice puree of tomatoes in a blender.

Heat desi ghee in a pan. Add curd-onion paste and sauté well.

Add cashew nuts and milk paste to the pan and sauté them.

Add tomato puree to the pan and cook.

Ad salt, red chili powder and cook for 5-10 minutes. Stir-fry.

Add paneer dices and cook on low flame for 5-10 minutes.

Garnish with coriander leaves and chopped green chilies.
Serve hot.
