Rich mughlai gobhi
Ingredients:

1 cauliflower, 2 tbsp corn flour, 2 tbsp almond powder, 2 tbsp cashew nuts powder, 4 cups paste of boiled spinach, 2 tomatoes, 2 cloves of garlic, ½ inch piece of ginger, 1 ½ tsp salt, ½ tsp red chili powder, 1 tsp dhania powder, 1 tsp garam masala, 1 ½ cup malai, ¼ tsp turmeric powder, 2 green chilies, oil to fry, 3-4 cardamoms, pinch of soda, 5-6 cashew nuts, 5-6 fried almonds, 3 eggs

Method:
Make a nice paste of tomatoes, onions, green chilies, ginger, garlic with powdered almonds and cashew nuts in a blender.

Heat oil in a pan and fry cardamom. Add onions and fry till they turn golden brown. Add 1-cup malai and fry again. Cook for 2 minutes and then add turmeric power, dhania powder, garam masala, red chili powder and salt with ¼ cup water. Fry all the ingredients for 2 minutes nicely. Let it cook. Add spinach to the fried ingredients and pour all in cooker. Let it cook in cooker for 5-6 minutes.

Beat the eggs in a bowl, add corn flour, soda, salt with powdered almonds. Mix them well. Dip the cauliflower pieces in this egg mixture well and the fry in oil.

Add the fried cauliflower pieces in a spinach mixture and garnish the dish with fried almonds, cashew nuts and rest of malai. Serve hot.

Amrood ka bhurta
Ingredients:

½ kg guava, ½ tsp salt, ¼ tsp rock salt, ¼ tsp black pepper powder, ¼ tsp garam masala, 2 tsp sugar, juice of 1 lemon, 1/2 tsp roasted jeera, ½ cup chopped coriander leaves, 1 chopped green chili

Method:
Boil the guava in boiled water in pan. Cool it for sometime and deseed it while mashing. Add all the seasoning with coriander leaves and green chilies. Add lemon juice and serve hot.
