Rice delight

Rice is such a food product that not only gives us taste rather it is full of nutrients. It is rich in carbohydrates. Rice provides amino acids, vitaminB1, B2and minerals. It provides fiber and folic acid which is very good for children and pregnant ladies. Here are some delicious recipes of rice

Tomato biryani
Ingredients:
- 2cups golden sela rice(soaked for ½ hrs)or 2 1/2 cup basmati rice(not needed to soak),11/2 tbsp refined oil, 4-5 small cardamom crushed,4-5 cloves ,2 strips of cinnamon, pinch of kesar(soaked in 2 tsp of water)2 big or 3 medium sized onion,1/2 tsp garam masala, 1 cup tomato puree(3 medium sized tomatoes),salt to taste,1/2 tsp sugar, few nuts and raisins, strips of 2 tomatoes(inside pulp should be taken that out can be used in puree),4 tsp tomato ketchup, 1tsp ginger

Method-
First of all, heat oil in pan. Then add cloves cardamom, cinnamon. Add ginger. Cook till it becomes lightly brown. Now add 1/2 tsp red chili powder and ½ tsp garam masala. Mix it well.

Now add washed and soaked rice in it. Cook till rice turns brown colored. Rotate it up and down slowly. Add 4 tsp of water (in both sela and basmati) and salt to taste. Let it boil when it starts boiling rotate again. Now cover it with lid. Keep it on high flame for 3-4 minutes then on medium fire for 3 minutes and then on slow fire till tenders. While changing flames rotate it with the help of spoon. When it becomes almost tender add tomato puree, raisins, kesar and sugar. Mix it well. Cover it with lid and let it on fire till it becomes softer .Add half of tomato strips. Mix it well. Now switch off the gas. Then grease the pan & roast the nuts, at the time of serving sprinkle ketchup.
Decorate with strips of tomatoes, nuts, green chilies, coriander leaves.

Mix Vegetable Pulao
Ingredients:7tbsp oil,1tsp jeera,4-5 cloves,2 strips of cinnamon,4-5 big cardamom crushed,3 medium sized carrot (peeled and cut into 2 1/2 cm. pieces),100 gms beans(cut into 2 1/2 cm pieces),1 cup peas,3 cups basmati rice presoaked ,4tsp salt(acc. to taste),31/2 cup water

Method: Heat oil in cooker for 2 minutes. Then add jeera, cardamom, cinnamon and cloves. Fry for 2-3 minutes by adding carrot beans and Peas. Now add rice and again fry it for 2-3 minutes. Put salt and water and rotate it slowly. Now cover the cooker with the lid, make it on high flame and let the pressure come. After the pressure, cook for 3 more minutes. Open the cooker and serve hot with raita.
