Paneer charisma

Paneer or cheese is associated with healthy food as it is rich in calcium and provides protein also. It is good for adolescents as they want more variety and new things at this age and generally indulge in fast foods which are unhealthy. Rich in calcium, this is a balanced dish providing nutrients to people of all age-groups.

Masala paneer
Ingredients: ½ kg. paneer(cut into small cubes), ½  tbsp refined oil(butter/desi ghee), 1 tsp ginger or ½ tsp grated garlic,1 tsp chili powder,11/2 tsp coriander powder,5 medium sized tomatoes(tomato puree),salt to taste,1 cup milk,1/2 cup malai or 150gms cream, 2-3 green chilies chopped lengthwise, coriander leaves,11/2 tsp thickly grated ginger,1tsp ground jeera

Method:
Heat oil on slow fire. Add ginger/garlic let it turn brown in color.
Now add red chili powder, coriander powder. Add immediately tomato puree in it.

Cook it on high flame till masala becomes thick. Add paneer cubes in that masala and mix it well. Add salt to taste. Cook for 2-3 minutes. Add 1 cup milk in it. Cook it on high flame till the gravy becomes thick. Now add cream/malai and cook for 3-4 minutes till the gravy becomes thick. Add strips of ginger and cook it for a minute. Now remove it from flame. Sprinkle jeera on it. Garnish with coriander leaves. The spicy paneer recipe is ready to serve.

Paneer kofta
Ingredients:1/2 kg paneer,4 bread slices,2 tsp full of Maida, a flake of garlic,1tsp ginger thickly grated, few chopped nuts and raisins(for filling inside),Maida for coating, oil for frying
Method: Dip bread slices in water for a minute then squeeze it add crushed Paneer, flakes of garlic ,ginger and salt to it. Mix all well and make nice dough of above ingredients. Take a little mixture on palm, press it and fill it with nuts and raisins and make round balls out of it. Coat balls with Maida and then deep fry till they turn lightly golden brown on medium flame.

Ingredients for gravy:1 ½  tbsp refined oil, 4-5 cardamom(crushed and peeled),paste of 6 medium sized onion(churn in a blender), 1/2 tsp grated garlic 11/2 tsp grated ginger,1tsp red chili powder, 1 ½ tsp coriander powder, 1/2 tsp kasoori methi,1tsp ground jeera, 4tsp full melon seeds, 1/3 cup cashew nuts, pinch of kesar,2 green chillies,250 gms cream or 2/3 cup malai,1 ½  cup tomato puree salt to taste

Method of preparing gravy:

Heat oil in a pan. Add cardamom, ginger, garlic. Cook it till it becomes pale in color. Add onion paste. Now cook it till onion paste turns brown in color at high flame. When it gets lightly brown add all spices. Mix it well. Add1/2 cup of water. Cook till almost dry. Add 4 cups of melon seeds or coarsely ground cashew nuts. Again add ½ cup of water. Cook till almost dry.

Add tomato puree, green chilies, and salt to taste at high flame. Add 3 ½ cup of water and cook it till the gravy is thick. Add malai/cream. Again cook it for 3-4 minutes. Now garnish with coriander leaves. At the time of serving add koftas and pour gravy on top.
