Nawabi recipes for food lovers

Mutter shufta
Ingredients:
300 gms fresh green peas,300 gms mava, ¾ cup curd, ½ tsp garam masala powder, 6 cardamoms, ½ tsp coriander leaves, a bunch of coriander leaves, ½ tsp cumin seeds, a few strands of saffron, salt to taste and ghee for frying
Method
Shell green peas, place in pressure cooker pan and add 1 ½ cups of water and pressure cook. Allow to cool. Remove the peas from the pressure pan and keep aside.
Heat ghee in the pressure pan; add cumin seeds, chili powder, mava and curd. Sauté on low fire until brown. Add cooked peas, coriander powder and salt to taste. Crush cardamom, saffron and add to green peas with garam masala and chopped coriander leaves. Cover the pan with the lid and pressure cook for a few minutes.
Mirch ka salan
Ingredients
1/ kg mutton, 6 large capsicum, ½ tsp cumin seeds, ½ tsp chili powder, 5 tsp oil, 1 tsp chili powder, 1 tsp sugar, ½ kg potatoes, ½ cup curd, salt to taste
Method:
Grind to a fine paste 1 bunch of coriander leaves, 2cm piece of ginger, 1 tomato, 6 cloves, and 3 onions.
Place potatoes in pressure pan with 1 ½ cups of water and pressure cook. After they are done, remove from pressure pan and peel.
Clean and wash mutton. Cut into medium size pieces.
Grind coriander leaves, garlic, ginger, tomatoes and onions into fine paste. Keep them aside.
Heat in the pressure pan. Add cumin seeds and meat and sauté until brown. Add the ground masala and chili powder, turmeric powder, garam masala, sugar and salt. Sauté a few minutes, then add capsicum with stalk and peeled whole potatoes. Sauté for 5 minutes. Mix in the curd and cook till gravy is well blended. Add 2 cups of water and pressure cook till done. Garnish with coriander leaves.
