Mouth-watering fish soup recipes
Balkan fish chowder
Ingredients:
500 gms fish fillets,4 cups fish stock or white poultry stock or water,1/2 cup diced celery,1/2 cup cooked rice, salt and pepper, 2eggs,juice of 1 lemon
Method:
Cook the whole fillets in the stock until tender. Strain and raise the stock. Add the celery to the stock and cook. Add the rice and season with salt and pepper. Beat the egg lightly with the lemon juice, add 1 cup of the stock, and stir into the rest. Check that there are no bones in the fish fillets, then break them into large chunks and add to the soup. Adjust the seasoning, heat through and serve.
Cod chowder
Ingredients:
60gm butter,2 tbsp plain flour,3 cups fish stock or white poultry stock,1 chopped onion,1 chopped and seeded sweet pepper,1/4 cup chopped parsley,1 cup chopped celery, salt and pepper,500 gm smoked cod (soaked, cooked and flaked), 125 gm grated cheese,1/2 cup cream,1 chopped hard boiled egg
Method:
Melt butter in a saucepan and add the flour. Cook gently for 3 minutes and then slowly blend in the stock stirring all the time. Bring to the boil. Add the onion, sweet pepper, parsley and celery, seasoning with salt and pepper. Simmer for thirty minutes, stir in the flaked cod. Just before serving, stir in the cheese and cream. Heat through but do not allow to boil. Serve garnished with chopped hard-boiled egg.
Shrimp and tomato soup
Ingredients:
2 tbsp olive oil,2 cloves of crushed garlic,1 finely chopped onion,1 kg peeled, seeded and finely chopped tomatoes,1 cup white stock,1 tsp chopped parsley,2 tsp chopped basil or tulsi, a pinch of thyme, salt and pepper,125 gm cooked shrimps,1 cup white wine
Method:
Heat olive oil in a saucepan and fry the garlic. Add onions and sauté for five minutes until golden. Add the tomatoes and simmer for few minutes. Add the stock, tomato puree, bay-leaf, parsley and thyme, seasoning with salt and pepper. Cook for 20 minutes. Remove the bay-leaf, add the shrimps and white wine and heat through. To serve, heat extra oil and pour a tsp on each bowl.
