White sauce
Ingredients

200 gm butter, 4 carrots, 100 gm Maida, 6 onions, salt and pepper to taste

Method
Wash carrots and onion and then chop them into small pieces.

Heat the butter in steel or aluminum utensil and sauté carrots and onions in it till whole mixture gets dry.
Add Maida and milk to the same mixture and cook until thick batter gets prepared. Add salt and pepper and take it off from the flame. Keep aside to cool don. Transfer to a clean bottle.
Your white sauce is ready to use.

Red chili sauce
Ingredients

500 gm kaccha aam, 200 gm red chili, 15 gm onion, 50 gm tomato, 300 gm sugar, 1 gm raisins, 15 gm sonth powder, 3 liter vinegar, salt to taste

Method
Peel off the mangoes, de-seed the and then chop into small pieces.
Chop tomato and onion into small pieces.
Make rough paste of red chilies.

Now cook all the ingredients in steel pan on low flame. Cook for 2 hours till the thick paste is ready.
Sieve the paste.

Fill into a clean bottle and seal it.
Your red chili sauce is ready to eat.

Mixed fruit sauce
400 gm khajoor, 400 gm khubani, 50 gm raisins, 150 gm apples, 175 gm salt, 15 gm garlic, 15 gm ginger, 15 gm red chilies, 300 gm sugar, 300 gm red tomatoes, 2 bottle vinegar

Method
Wash khajoor, khubani, raisins in water and dry them. Add vinegar to them and mix all together well.
Peel off the tomatoes and chop them into small pieces.

Pour ginger, garlic, red chilies and chopped tomatoes in blender to make a nice paste.
Peel off the apples and chop into small pieces.


Pour the above prepared tomato paste in a pan and sauté them on low flame. Add chopped apples to pan with salt.

Also add the sugar and rest vinegar to the mixture and cook.
When the mixture becomes thick in consistency, take it off from the flame. Keep aside to cool down.
Pour into clean container. Sauce is ready.
