How to prepare baigan tikka

Here is the tempting and sumptuous recipe of baigan tikka especially for you, written down below-just read it out carefully and make sure you prepare it for all your family members and friends. I am sure they would certainly love it!
Ingredients for preparing baigan tikka:
4 brinjals, 2 onions, 1 carrot, 2 potatoes, 2 tomatoes, 2 bunches of coriander leaves, 4 garlic cloves, ½ tsp cumin seeds, 1 tsp garam masala, ½ tsp coriander leaves, a handful of French beans, a handful of shelled green peas, a bunch of mint, a small piece of ginger, juice of a lime, salt to taste
Method:
Place potatoes in pressure pan with 1 ½ cups of water. Place on flame and pressure cook. Remove the potatoes after allowing it to cool, peel them and mash. Keep them aside.
Slit the brinjals horizontally and grill until half done. Scoop out the pulp carefully and keep the skin aside. Chop carrots, onions and French beans into small pieces-keep them separated. Grind the coriander leaves, ginger, garlic, mint and salt together into a smooth paste.
Heat oil in the pressure pan and chop onions. Sauté for a few minutes. Add ground chutney and fry well. Add carrots, peas, potatoes, beans, and brinjal pulp, sauté for a few more minutes. Add turmeric powder, coriander powder, cumin powder and garam masala powder and a little bit of salt. Continue to sauté. Squeeze juice of a lime and remove from the fire. place a little of the above mixture into each brinjal skin. Roast on grill or in a hot tandoor till nicely done. Serve hot.
