Healthy food for healthy eye sight
Spinach is the most important food item to keep your eyesight in healthy state, so make sure you incorporate this rich vegetable in your diet. It is highly rich in vitamin A, which is essentially required by your body for having good eyesight. Here are two healthy spinach recipes, try them out and keep your eyes in good condition.
Palak and soyabean ka saag
Ingredients:
2 cups palak puree, 1 tbsp oil, 1 tsp jeera seeds, 2-3 curry leaves, 1 tsp chopped garlic, 1 tsp chopped ginger, 1 tsp garam masala powder, 1 tsp red chili powder, ½ cup soy bean chunks (soaked in hot water for 20 minutes an drained), salt to taste
To serve with rice, onion rings and pickle.
Method:
To prepare the sag, heat oil in a pan, sauté the jeera, garlic, ginger, and curry leaves or 10 seconds.
Add the palak puree and simmer for 3-4 minutes, add salt to taste and garam masala powder long with some red chili powder, mix well and add the cooked soybean and cook for another 5 minutes.remove an serve hot with rice and onion rings.
You can try the same recipe using palak puree with paneer, mix vegetables etc.
Palak corn delight
Ingredients:
1 ½ kg spinach, 1 tbsp oil, 1 tsp cumin seeds, 2 pieces dry red chilies, 1 piece bay leaf, 1 tsp grated ginger, 1 tsp finely minced garlic, ¾ cup tomato +onion paste, 1 tsp red chili powder, 200 gm corn kernels, 1 cup water
Method:
Blanch washed spinach in boiling water and cool. Finely chop the blanched spinach leaves.
Heat oil in a karahi, add cumin seeds. When they crackle, add dry red chilies and bay leaves.
Add ginger, garlic and sauté for 2-3 minutes.
Add the tomato onion paste and fry for a minute. Add red chili powder and coriander powder, and fry for a minute. Add corn kernels, mix well and sauté for 2 minutes.
Add chopped spinach. Sauté for 5 minutes. Add water, cook on low flame for 2-3 minutes.
