Exotic salmon dish- just read out
Here is a recipe of an exotic salmon dish for all the non-vegetarian lovers. Just read it out and make sure you prepare it in your kitchen. Believe me; your family will love this dish!
Malika-e-dariya
Ingredients for preparing malika-e-dariya:
4 streaks of pink salmon (60 gm)
For first marination of preparing malika-e-dariya:
6 tbsp red wine vinegar, 1 chakriphool, 2 ½ tbsp strained garlic paste, 2 ½ tbsp strained ginger paste, salt, 1 tsp saunf
For the second marination of preparing malika-e-dariya:
150 gm yoghurt cheese, ¾ tsp paprika powder, 1 sprig chopped dill, 2 tbsp cream, 1 tsp honey, 30gm grated and mashed cheddar, 2 tsp lemon juice, 2 tbsp mustard oil, salt, 1 ½ tsp ajwain
For the sprinkle:
A generous pinch of aamchur, a generous pinch of kasturi methi powder, a pinch of black rock salt
Method for preparing malika-e-dariya:
To prepare the fish:
Clean, bones, wash, pat dry and cut into 2 ½ inches cubes.
For the first marination for preparing malika-e-dariya:
Mix all the ingredients evenly rub the fish cubes with this marinade and reserve for 15cminutes.
For the second marination of preparing malika-e-dariya:
Whisk yoghurt cheese in a bowl. Add the remaining ingredients, mix well. Evenly rub the fish cubes with this marinade, and reserve for 15 minutes.
For the skewering of preparing malika-e-dariya:
Skewer the cubes of fish slightly apart. Keep a tray underneath to collect the drippings. Discard the star anise.
To proceed:
Roast in a moderately hot tan door for three to four minutes. Or on a charcoal grill, for the same time. Or in preheated oven, on a greased baking tray for 5 to 6 minutes. Remove and hang the skewers to allow the excess moisture to drip off. Roast again for a minute.
