Exotic promfret recipe

Meen moiley
Ingredients:
12 fillets snapper/ promfret, 2 tbsp coconut oil, 1 tbsp mustard seeds, 1 inch piece of ginger, 6 green chilies, 150 gm onions, salt to taste, 3 medium tomatoes, ½ tsp turmeric powder, ¾ cup coconut milk (third extract), ¾ cup coconut milk (second extract), ½ cup coconut milk (first extract), 1 tbsp lemon juice
To prepare the fish:
Wash and pat dry.
To prepare the vegetables:
Peel and finely chop the garlic. Scrape, wash and cut the ginger into juliennes. Wash the green chilies, slit, deseed, cut into juliennes and discard the stem. Peel the onions, wash and cut into roundels and separate the rings. Clean and wash the curry leaves. Remove the eyes of the tomatoes, wash and cut into eight wedges each.
To proceed:
Heat oil in a pan. Add the mustard seeds, stir over medium heat until they begin to pop, add the ginger and garlic, stir for a minute, add the green chilies and stir. Then add the onions, and sauté until translucent and glossy. Add the turmeric, stir, add the fish and the third extract of coconut milk, bring to a boil, reduce to low heat and simmer, turning carefully once, for two or three minutes. Add salt and stir. Now add curry leaves, tomatoes, and the second extract, cover, and simmer for two to three minutes. Uncover, remove from heat gently, stir in the first extract of coconut milk, return handi to heat, bring to a boil over low heat, sprinkle lemon juice and stir carefully. Remove and adjust the seasoning.
To serve:
Remove to a bowl and serve with steamed rice.
