Batatyachi kachori
Ingredients:
½ kg potatoes,100 gm arrowroot, 1 grated cocout,2-3 green chilies, 1 tsp cardamom seeds, 1-2 tbsp lemon juice, 1-2 tsp sugar, and salt to taste
Method:
Boil and mash the potatoes. Knead into firm dough along with50 gm of arrowroot and salt. This is the outer covering of the kachori.mix the grated coconut with crushed green chiles, sugar, lemon, cardamom and salt. This is the filing mixture. Take small portion of the dough and pat between palm to make a small puri, stuff the same with the coconut mixture and forma a ball. Repeat the procedure for the rest too. Roll the balls into the remaining arrowroot and deep fry in the hot oil till they turn golden brown in color. Serve hot with red and green chutney.
Chanderkala
Ingredients:
1 kg Maida, 200 gm ghee,25 gm maguj,500 gm mawa,25 gm badam giri, 25 gm broken kaju,25 gm chironji, 250 gm sugar, 25 gm pista, ½ gm kesar, ½ kg ghee for frying,1 kg sugar chasni (2 tar)
For garnishing:
4 silver verk, ¼ gm kesar, 10 gm pista
Method:
Make a dough of Maida and ghee little harder than the one you prepare for chapattis by adding water to it. Prepare sugar syrup with water and sugar of 2 tar. Afterwards prepare a stuffing by mixing mawa with crushed nuts, kesar and sugar. Divide the dough into 80 pieces. Roll reach dough into a small poori and place stuffing in the center of it, covering it with another pori to seal it like a gujia. Now heat ghee in a pan. Fry all the chanderkala in ghee at moderate temperature, till thy turn golden brown in color. Soak in sugar syrup for 10 minutes .serve them hot after garnishing.
