Different types of mango chutneys
Hey people, here are some different variety of tasty and sumptuous mango chutneys. Just read their recipes below and try them in your kitchen cabinets. I am sure you all would them!
Navratni mango chutney
Ingredients
1 kg kacche mangoes, 400 gm chuaare, 120 gm almonds, 120 gm raisins, 120 gm peeled and grated ginger, 1 ¼ kg sugar, 1tbsp ghee, 1 tsp clove powder, 20 gm jaaayphal, 2 tsp black pepper, 10 gm cardamom, 1 tsp kesar, 40 gm sendha salt, 40 gm rock salt, 200 gm raisins
Method
Grate the mangoes.
Roast all the dry masala together in a pan. Add chopped almonds and raisins to it and stir nicely. Add all the three types of salt in the mixture and stir.
Prepare nice sugar syrup and add chopped chuaare to it. Also add the grated mangoes and other masala mixture and mix well. If you want you can add vinegar to it.
Pour it into a clean container and seal it.
Your tasty mango navratni chutney is ready to eat.
Kashmiri mango chutney
Ingredients
1 kg mangoes, 40 gm crushed red chili, 40 gm ginger, 20 gm garlic, 200 gm sugar, 50 gm salt, 25 gm mustard seeds powder, mustard oil as required, 200 gm vinegar
Method
Peel off oranges, de-seed them and chop into small pieces.
Add sugar and vinegar and boil them together in a pan on low flame.
Keep aside to cool down.
Pour this mixture along with other seasonings in a blender to make a nice paste.
Mix everything well.
Heat oil in another pan and pour the above prepared paste in it and cook for sometime.
Stir nicely.
Pour the prepared chutney in a clean container and seal it.
Your Kashmiri mango chutney is ready to eat.
