Sliced tomato with cilantro vinaigrette
Ingredients for preparing Sliced tomato with cilantro vinaigrette:
4 medium tomatoes, ½ cup fresh cilantro, ½ cup olive oil, ¼ cup balsamic vinegar, salt, pepper and sugar to taste
Method for preparing Sliced tomato with cilantro vinaigrette:
Clean and slice the tomatoes and place in a serving bowl. In a food processor, mince the fresh cilantro and add the olive oil in a steady stream until blended. Add balsamic vinegar to the cilantro-oil mixture and blend. Season and pour over tomato slices and serve.
Stuffed tomatoes and bell peppers with rice salad
Ingredients for preparing Stuffed tomatoes and bell peppers with rice salad:
4 large tomatoes, ½ cup chopped fresh dill, fresh parsley, fresh herbs, salt and pepper to taste, 2 yellow bell peppers, 2 green bell peppers, 2 cups rice, ¼ cup extra virgin Greek olive oil, 1 cup finely sliced spring onion, ½ cup rains, 1/3 cup sliced dried apricots, 1/3 cup pine nuts
Method for preparing Stuffed tomatoes and bell peppers with rice salad:
Slice off the top of tomatoes. Remove the pulp and seeds. Slice the stem off the peppers and cut seeds away. Place the tomatoes and peppers under the grill for 2-3 minutes. For salad, mix rice with remaining ingredients. Season with salt and pepper. Let cool. Spoon mixture into tomatoes and peppers and serve.
