Cauliflower soup
Ingredients:
1 medium cauliflower (cut up), 2 small onions (minced), 3 cups mutton stock, 1 cup milk, 2 tbsp butter, 1 sprig parsley (finely chopped), 2 egg yolks (well beaten), salt and pepper to taste
Method:
Heat butter and sauté onion. Add cauliflower, mutton sock, salt, pepper and cook until cauliflower turns tender. Mash and pass through a sieve. To this add milk and egg yolks. Cook 3 minutes longer.
Vegetarian cauliflower soup can be prepared by using water instead of mutton stock and 1 tsp corn flour mixed with melted butter in place of egg yolks. serve garnished with parsley.
Almond soup
Ingredients:
2 cups (blanched almonds), 1 cup milk, 2 tsp cream, 3 cups chicken stock, dash of saffron, ½ tsp nutmeg, salt and pepper to taste
Method:
Make a paste of 1 ½ cups almond. Add milk, saffron, nutmeg and simmer for 10 minutes. Add stock, salt, pepper and boil 7 minutes longer. Serve hot garnished with whipped cream and finely sliced almonds.
South Indian soup
Ingredients:
½ cup toovar dal, ½ cup tamarind water (medium consistency), 2 medium tomatoes (blanched and diced), 2 tbsp finely chopped coriander leaves, 10 curry leaves, 5 cups water, salt to taste
Method:
Roast and grind to a paste: ½ inch ginger, ½ inch piece of turmeric, 2 Kashmiri chillies, 4 pepper corns, 1 tsp cumin seeds, 1 tsp coriander seeds, 1 bay leaf.
Boil dal in a little water, mash, pass through a sieve and set aside. Take tamarind water, add salt, ground paste, curry leaves, tomatoes, water and boil for 10 minutes. Add dal, coriander leaves and boil 5 minutes longer. Serve piping hot.
