Delicious rice recipes
Here are some delicious rice recipes for all you rice lovers-just go through them! I am sure; you all would love the recipes given below!
Japanese briyani
For rice:
Ingredients:
3 cups water, 3 ½ cups rice
For mushroom sauce:
Ingredients:
200 gm separated shimeji mushrooms, 100 gm chopped maitake mushrooms, 5-6 shiitake mushrooms sliced thin, 2 sheets fried tofu (aburage) sliced thin, 1 carrot, sliced into juliennes, 1 cup dashi stock, 3 tbsp sake, 4 tbsp Soya sauce, 2 tsp sugar
Method:
Wash the rice and soak for 30 minutes.
Mix the seasoning ingredients for the sauce and bring to a boil.
Add the mushrooms, aburage and carrots. Cook for 1 minute.
Taste the mushroom mixture to the rice. Mix well.
Add water and cook covered until the water is absorbed.
For dashi stock:
Soak 4 shiitake mushrooms I 3 cups of water for 2-3 hours.
Use dry mushrooms if available.
Use the dark liquid as a stock to prepare rice and vegetable dishes.
Spicy rice with eggplant
Ingredients:
1 cup long grained basmati rice, 1 large cubed eggplant (remove the seed if you want), 1 large silvered onion, 2 tbsp garam masala powder, 1 sp red chilly powder, 1 tsp haldi powder, ½ tsp mustard seeds, salt to taste, 1 pinch hing, 2 tsp lemon juice, 2 tbsp oil, 12-15 broken cashew nuts, 1 tsp ghee
Method:
Cook rice with a pinch of salt. Set aside.
Add hing and mustard seeds until they splutter completely. Add garam masala powder, chilly powder, haldi and onions. Fry until the onions brown.
Add eggplant, salt and lemon juice. Mix well.
Cover the pan until the eggplant is soft. Mix the rice into the eggplant mixture. Lower the heat and cook for 10 minutes.
Heat gee and fry cashew nuts until golden brown. Use to garnish rice.
