Delicious mango recipes
The mango season is here again, and you can always make a full meal out of it. Here are few recipes drawn across the country using the king of fruits, just try out them in your home.
Sansav
Ingredients:
8 small ripe mangoes, 40 gms grated coconut, 1tsp chili powder, 1 tbsp tamarind pulp, 1 tbsp sugar, 1 tsp mustard seeds, salt to taste, and 2 tbsp oil
Method:
Wash, peel and squeeze mango pulp of four mangoes and peel the remaining four mangoes and keep it aside. Make a paste of four grated coconut by adding half cup of water. Mix chili powder, tamarind pulp, sugar and salt to it. Add mango pulp and the four peeled mangoes to the above coconut paste and mix well. Heat oil in pan, give a tempering of mustard seeds and when the seeds splutter, add it to the coconut and mango mix. You can have it with any Indian bread or by itself.
Kaacha aamer chutney
Ingredients:
1 kg raw mangoes,60-70 ml mustard oil,10-15 curry leaves,1 tbsp mustard seeds,1 tsp haldi, salt to taste,250 gm sugar,1/2 tsp roasted zeera powder
Method:
Peel the mangoes and slice them .heat mustard oil. Add mustard seeds till they start crackling add curry leaves, slices of mangoes and approx. ½ lit of water and let it cook. After it gets cooked, add haldi powder, salt and sugar. Sugar has to be added after mangoes are cooked because if it is added earlier, the mangoes will stay uncooked. Check taste for salt and sugar. Finish it with roasted zeera powder.
Mango payasam
Ingredients:
Pulp of four medium sized mangoes, 500ml milk, 80 gms sugar, 1 tsp cardamom powder
Method:
Heat milk in a pan. Boil it on a slow flame for 10-15 minutes till it thickens to half. Add sugar and cardamom to it and let it mix well. Remove it from the flame. Add mango pulp and mix well. Garnish it with mango pieces.
