A perfect monsoon dish-have a look

Hey girls and guys, here is a recipe of a perfect monsoon dish, that you all would loved to eat. Just go through it below and prepare in your kitchen cabinet. It will only take 45 minutes for you to prepare this mouth-watering dish.

Chicken enchiladas with tropical fruit salsa sour cream and guacamole
Ingredients:

For the enchiladas:
2 chicken breasts, ¼ diced onion, ½ tsp chili powder, ½ tsp cumin powder, ½ tsp garlic powder fresh garlic diced, 100 gm mild cheddar cheese, oil, 2 white corn tortillas

For the tropical fruit salsa:
50 gm fresh diced pineapple, 50 gm died fresh mango, 50 gm chopped fresh red onion, 5 gm chopped fresh coriander leaves, and 1 finely chopped jalapeno pepper

For the sour cream:
100 ml fresh cream, 10 ml lime juice, salt to taste

For the guacamole salsa:
½ pureed avocados, ¼ chopped red onion, ¼ chopped tomatoes, 3 gm chopped green chilies, 10 ml lime juice

Method:
Boil the chicken breasts until done and cube. In a large oiled pan, sauté the chicken cubes, spices and the onion until the onions are translucent. Allow to cool and then add the cheese. In an oiled pan, cook the tortillas on each side for approximately 10-15 seconds over a low-medium heat. Set the tortillas aside until cool enough. Place some chicken mixture in the centre of each tortilla and roll.

For the tropical fruit salsa, mix al the ingredients together and keep aside. For the guacamole salsa, mix together the avocado puree, chopped onion, chopped green chilies, tomato and lime juice in a mixing bowl. Check the seasoning.

To serve, place the chicken enchiladas in the centre of the plate, pour over the tropical fruit salsa and serve along with the sour cream and guacamole salsa.
