Yummy Party snacks
Now a days, organizing a party at home is a fashion. Every now and then, we like to throw a party which is good in a way; at least we can meet our friends in such a busy schedule and relive some stress. But, what a party without yummy snacks!
So, here is couple of snack recipes.
1.) Vegetable Fritter with tomato sauce:
(Preparation time: 30 minutes, total cooking time: 36 minutes and makes 12 pieces)
For Fritters:
2 potatoes
1 Carrot
2 Zucchini
120 gm (4 oz) sweet potatoes (peeled)
2 tablespoons plain (all-purpose flour)
3 eggs, lightly beaten
Salt to taste and Green chilies
Oil for frying
For Tomato Sauce:
1 tablespoon oil
1 small Onion
1 garlic clove, crushed
½ teaspoon ground paprika
3 ripe tomatoes, finally chopped
15 gm (1/4 cup) finely shredded fresh basil.
Fritters:
• Grate potatoes, carrot, zucchini and sweet potato. Chop green chilies.
• Squeeze out all the excess moisture from the vegetables.
• Sprinkle flour over vegetables, add salt to taste and combine. Add eggs and mix well.
• Heat oil in a pan and when it is heated properly, drop almost 3 tablespoons of the mixture. Fry it for 2-3 minutes over the medium heat and drain on paper towels.
To make sauce:
Heat oil in a pan, add onion, garlic, and paprika; cook over medium heat for 3-5 minutes. Add tomatoes, reduce heat to low, and cook for 10 minutes. Stir in occasionally, add basil.
Decorate vegetable fritters in a serving plate with fresh basil leaves and sauce.
2.) Crisp Potato skins with chili cheese dip:
(Preparation time :30 minutes, serves 4-6)
6 medium potatoes (1.2 kg)
Oil for frying
• Preheat oven for 210 degree C(415 degree F)
• Scrub potatoes and dry thoroughly; do not peel. Prick each potato with a fork twice. Bake it for one hour. Remove from oven and cool.
• Cut the potatoes in half and scoop out the flesh, leaving about 5 mm of the potato in the shell (flesh will become soft due to baking). Cut each half into three wedges.
• Heat Oil in a heavy-based pan; place the batches of skin potato gently. Cook for 2 minutes or until golden crisp.
Chili Cheese dip:
1 tablespoon oil
1 small onion, finely chopped
1 garlic clove, crushed
1 teaspoon mild chili powder
185 gm (3/4 cup) sour cream
250 gm (2cups) cheddar cheese
Heat oil in pan, add onion and cook over medium heat. Add garlic and chili powder, cook for 2 minutes. Add sour cream and stir until it is warm and thinned down slightly; add cheese and stir till the mixture is smooth.
Serve hot Crisp potato skins with the sauce.
