Ingredients:



1/2 cup of olive oil
1 1/2 kg of skinless and boneless chicken, cut into small pieces
5 cloves of garlic, minced
1/2 cup of water
3 tbsp of fresh lime juice
A few strands saffron, diluted and crushed in a very small amount of water
Salt to taste

Method:



Heat the oil in a large frying pan. Add the chicken pieces to the pan and cook over medium heat till the pieces turn golden brown in color. When done place the chicken pieces in a large, shallow casserole and salt the pieces. Pour off all the oil leaving about 4 tablespoons of oil in the pan. Add the garlic to the pan and saute. Stir in water and bring it to boil. Pour it over the chicken pieces. Add the saffron and the lemon juice to it. Cook, covered with a plate, for about 20 minutes till the meat becomes tender. Serve hot along with a light, red wine.

Chicken with Rice

Serving: 4 persons

Cooking Time: 40 minutes

Ingredients:



3 pounds of chicken, cut into pieces
1 chorizo sausage, sliced
1 cup of long grain rice, rinsed
1 cup of green olives
1 red onion, sliced
1 red capsicum, sliced
1 green capsicum, sliced
4 tomatoes, skinned and chopped
2 cloves of garlic, chopped
1 tbsp of smoked paprika
1 cup of white wine
1 1/2 cup of chicken stock
1 tbsp of olive oil
1 pinch of saffron
2 bay leaves

Method:

Heat the oil in a large frying pan. Add the chicken pieces to the oil and cook till they become brown on all the sides. Remove the chicken from heat and set aside in a bowl. Now to the same pan add the sausage slices, the onion and capsicum and cook till they become tender. Add garlic to the pan and cook for a minute. Then stir in the paprika and the rice along with the wine and cook for a minute. Add tomatoes slices and transfer the chicken to the pan. Season and add the chicken stock, saffron and bay leaves to the pan and cover. Simmer for 30 minutes. After 30 minutes stir in the olives and cook for another minute before removing from heat. Serve hot.
