Lemony Garlic Shrimp with Pasta
Serving: 4 persons
Prep Time: 4 hours
Cooking Time: 45 minutes
Ingredients
3/4 cup of kosher salt
1 gallon of cold water
2 pounds of large shrimp, peeled and deveined
1 package angel hair pasta
1/4 cup of unsalted butter
1/4 cup of olive oil
3 tbsp of minced garlic
1/3 cup of white wine
1/4 cup of lemon juice
1/2 tsp of crushed red pepper flakes
1 tsp of freshly ground black pepper
1/2 cup of fresh parsley, chopped
1 tablespoon of lemon zest
Method
In a large pot pour the cold water and dissolve the kosher salt in it. Add the shrimp to the water and refrigerate this for about 4 hours. When done, drain and pat the shrimps dry. Fill another large pot with lightly salted water and bring it to a boil. When the water starts boiling, stir in the angel hair pasta. Cook the pasta uncovered, stirring occasionally. Remove when the pasta has cooked through but is still a little firm. Drain well, using a colander.
In the mean time, melt the butter in a skillet over medium-low heat and add the olive oil to it. Stir in the garlic, and saute for 3 minutes before adding in the shrimp, white wine, lemon juice, and red pepper flakes. Stir to mix all ingredients well and cook until the shrimp is no longer translucent in color, for about 6 minutes. Next stir in the black pepper, parsley, and lemon zest. Toss well with the angel hair pasta so that all ingredients are combined thoroughly. Serve hot.
