001sea-food Mackerel With Apricot And Honey

Serves: 4


Cleaned and boned small mackerels- 4;

Dry white wine- quarter pint;

Honey- 4 tsp;


Dried apricots, chopped- 2 oz;

Crumbs of white bread;

Fresh cream- 4 tsp;

Butter- 2 oz;

Freshly chopped parsley- 2 tsp;

Salt and pepper to taste

Method of Preparation:

– Mix the chopped apricots with tarragon, breadcrumbs, honey, salt and pepper.

– Pre-heat the oven to 375 Fahrenheit.

– Fill the apricot mixture into the cavity of the fish after removing the heads of the mackerel. Keep this aside.

– Butter a microwave dish and set the stuffed mackerel inside.

– Apply the remaining butter on the fish and sprinkle white wine. Cover the dish with aluminum foil and bake until tender.

– After it is cooked, mix the cream into the juice coming from the baked fish.

– Sprinkle chopped parsley on the dish and serve immediately.

Baked Tuna

Serves: 4


Fresh steaks of tuna;

Onion- 1 large sliced finely;

Tomatoes- 2 large peeled and chopped;

Crumbled basil- ½ tbsp;

Olive oil- 4 tsp;

Dry vermouth- ½ cup;

Salt and pepper to taste

Method of Preparation:

– Season the tuna with olive oil, salt, and pepper.

– Pre-heat the oven at 425 Fahrenheit.

– Fry the onions, tomatoes and vermouth in a frying pan until its little crispy.

– Add the onion mixture over the seasoned tuna. Place the fish in a shallow baking dish.

– Set for baking. Bake until the fish is tender. Right time cannot be given as it depends on the thickness of the fish.

– Garnish with dry basil and serve hot.

Banana Fish and Celery

Serves: 4


Washed, peeled, and cut lengthwise bananas- 3;

Fish fillets;

White flour- 1/3 cup;

Curry powder- 1 ½ tbsp;

Lemon juice- 4 tsp;

Sliced celery stalks- half cup;

Dark soy sauce- ½ tsp;

Butter- 7 tsp;

Vegetable oil- 7 tsp;

Method of Preparation:

– Make a paste of dark soy sauce, white flour, and curry powder.

– Coat the fish fillets and banana slices with this mixture.

– Sauté the celery and keep it aside.

– Mix oil and butter in a skillet and sauté the bananas, keep it aside.

– Sauté the coated fish similarly and set it aside.

– In a serving platter, place the bananas and fish side by side. Sprinkle lemon juice over it.

– Add the celery as a topping.
