bean-corn-soup Black Bean And Corn Chowder Soup

Serves- 9-10 bowls of soup

Cooking Time: an hour


5 strips of bacon sliced into pieces;

2 tsp bacon fat;

3 chopped garlic;

A medium sized onion diced;

Chicken stock;

2 cups of thawed sweet corn;

2 cans of drained black beans;

½ tsp dried oregano;

½ tsp chili powder;

Salt and pepper to taste

Method Of Preparation

1. In a saucepan, fry the sliced bacons till crispy. Keep it aside.

2. In the same pan, sauté the diced onions and little bit salt in bacon fat till the onion turns translucent.

3. Then add the garlic and half of the crisp bacons. Mix it well for 2 minutes then add the chicken broth and the remaining ingredients.

4. Bring to a simmer the whole thing in medium heat for 18-20 minutes.

5. If you want a thicker soup, add mashed black means as much the desired soup texture.

6. Check the seasonings.

7. Serve hot with the remaining crisp bacons sprinkled as garnish.

Cranberry Apple Stuffed Acorn Squash

Serves: 4 portions

Cooking Time: an hour and fifteen minutes


2 medium apples peeled and cut into small pieces;

2 acorn squash;

Apple juice;

1 tsp cinnamon powder;

1 ½ melted butter;

½ cup dried cranberries;

Salt and pepper to taste

Method Of Preparation:

1. Split squash in halves and remove the seeds and pulp.

2. In a baking dish, place the halved squash the cut side kept down.

3. Pour little apple juice over it for extra sweetness.

4. Bake the squash for 30 minutes at 350 degree Fahrenheit.

5. While the squash bakes, mix the cranberries, apple, cinnamon, butter, pepper and salt into a fine stuffing.

6. After 30 minutes, take out the baked squash and fill the half pieces with the filling.

7. Again bake for another 30 minutes and serve.

Corn Salsa

Serves 8 cups

Cooking Time: 20 minutes


3 cups of fresh corn kernels;

3-4 tomatoes diced;

Black beans;

3 green jalapenos seeded and diced;

4-5 stalks of green onions sliced;

A bunch of cilantro chopped;

4 tbsp olive oil;

1 tsp dried oregano;

1 tsp sugar;

Lemon juice;

Salt and pepper to taste

Method of Preparation:

1. In a large bowl, mix all the ingredients.

2. Refrigerate for an hour at least before serving

3. Toss again before serving.
