cherry-almond-1 Cherry Almond Crumble

700 grams of cherries
250 grams of all-purpose flour
6 tbsp of almonds, chopped
5 tbsp of oats
4 tbsp of caster sugar
3 tbsp of demerera sugar
6 tbsp of water
100 grams of unsalted butter, chilled and diced


Stone the cherries and place them in a mixing bowl. Add caster sugar and water to it and toss to coat evenly. Set aside. Transfer the flour and butter to a food processor. Process till the mixture looks like breadcrumbs. Heat the oven to 180 degrees C. Add the oats, chopped almonds and demerera sugar to the flour and butter mixture and stir to make a crumble.

Take 6 ovenproof cups and divide the cherries, equally, between them. Spoon the crumble mix all over the cherries in each of the cups. Bake for about 25 minutes till the crumble turns golden in color. You can serve this in same the cups or  in small serving bowls.

Cherry Ice Cream

Serving: 8 persons
Prep Time: 30 minutes
Chilling Time: At least 3 hours


400 grams of cherries
500 grams of fresh vanilla custard
3/4 tsp of vanilla extract
500 grams of double cream, softly whipped
4 tbsp of caster sugar


Stone the cherries, chop them finely and keep them in a bowl. Mount a pot on medium flame with the caster sugar in it. Add the chopped cherries to the pot and combine with the melted sugar. Cook till the cherries are softened. In a mixing bowl combine the fresh vanilla custard with the softly whipped cream and vanilla extract to make a smooth mixture. Pour this in an ice-cream maker and churn until softy frozen. You should be able to stir the cherries through. Transfer to a container and stir through the cherries. Freeze for at least 3 hours. Serve chilled in ice-cream cups.

Makes a great dessert during the sweltering heat of the summers.
