Caribbean Islands is blessed with abundant seafood. There are number of seafood recipes of the Islands that any epicurean would love to savor. Here are some Bahamian seafood recipes that are easy to make.
2 cups of cooked fish (you can use any fish, including the popular mahi-mahi, marlin or red snapper)
2 cups of flour
2 teaspoons baking powder
1 large onion, finely diced
1 medium green pepper, finely diced
1 tablespoon lime juice
1 cup water
Salt to taste
Hot pepper to taste
Vegetable oil for frying
Method of preparation
Finely slice the fish to form flakes. Put the fish flakes in a bowl, add onion, green pepper, hot pepper, salt and the limejuice, and mix the ingredients well. Now pour oil in a cooking pan and heat it. In a bowl add flour and baking powder and mix them well. Add water to the flour to form batter. Coat the fish flakes with the batter. Drop teaspoonfuls of the flour batter coated fish in the oil and fry them until the fritters become golden brown. Remove the fish fritters and serve them hot.
Bahamian rock lobster with creamy grits
1 to 2 pounds of lobster meat
8 cups of lobster stock
4 slices of bacon
1 pound mushroom, finely chopped
1 large onion, diced
2 cloves of garlic, minced finely
8 ounce of sun dried tomatoes, finely chopped
2 bay leaves
1 tablespoon thyme
2 tablespoon parsley
1 cup white wine
Salt and black pepper to taste
Method of preparation
Boil the lobster stock in a pan. When the stock starts boiling, add the bay leaves, lobster meat and salt. When the lobster becomes opaque, remove the lobster meat from the stock with a spoon. Discard the bay leaves and keep aside the liquid.
Preparing the grits
In a pan melt butter and add minced garlic and onions, until they become soft. Now add 2 cups of corn grits. Stir the grits for a minute and add the cooking stock. Simmer until the grits become fluffy.
Put oil in a pan and heat it. Add bacon and fry it until it becomes tender. Remove the bacon. In the same pan, add the mushroom, onion, garlic, thyme, parsley and tomatoes to the oil. Cook for a few minutes. Put the bacon slices. Add white wine. Let the wine reduce to half. Now add the lobster meat, limejuice and the corn grits. Season the dish with salt and pepper.
