Corn is one of the most popular vegetables in the world. The absolute best way to eat corn is fresh, straight out of the garden and still on the cob, but it is also good when it comes out of a can or has been frozen. Corn can be enjoyed when it is eaten by itself or it can be used to add flavor and texture to a variety of dishes.

If you are interested in starting a garden, growing corn is an excellent choice to begin with. The vegetable grows in a wide variety of soils, has been genetically altered to resist a wide variety of pests and diseases. Your corn is ready to harvest when the silk, the long hairs that protrude from the top of the ear of corn, go from pale blond to dark brown in color.

The average serving size of corn is one ear or one hundred grams.

Good for Diabetics

Corn, in moderate amounts, is an excellent choice for someone who has diabetes.  Corn has just the right mix of minerals and vitamins to help make sure that the person’s insulin stays in a healthy range.

Lots of Dietary Fiber

One serving of corn has 2.7 grams of dietary fiber. The dietary fiber in corn helps your digestive tract break down your food. After the digestive fiber has finished working in your stomach it then moves into your colon where it relieves constipation and works to prevent colon cancer.

Improve Your Metabolism

Corn is an excellent way to help your body convert carbohydrates into energy instead of simply storing the extra carbs in your body’s fat cells. This is why corn is such an important part of so many diets.

Beta-cryptoxanthin

Corn is an excellent way to get a mineral called beta-cryptoxanthin which significantly reduces your chances of developing lung cancer. At the same time, eating corn on a regular basis will also improve your kidney function and preventing renal failure.

Lots of Folate

A single serving of corn has a large amount of folate. When an expectant woman eats a serving of corn every single day while she is pregnant, the corn’s folate helps make sure that the fetus’s cells are growing properly.
