Meat Substitutes
October 22, 2008
Who says you will get a disease when you cut down the amount of meat you eat? This is not true because today there are a lot of meat substitutes that can give you enough protein. You just have to try some of them. Here are some examples.
Textured vegetable protein
This might sound scary but it is not. This is just defatted soy flour which you might have being eating all along. It is either is flakes or chunks. You must only rehydrate it with water or broth before you cook it. TVP can last up to a year on the shelf. 4 oz of TVP gives you the same amount of protein that 8 oz of meat gives. It is great substitute for meat products like ground beef in burgers.
Tofu
Tofu could be called soy cheese as it takes the same process like making cheese. This is a marvellous culinary product as it is delicate and versatile. It comes in 3 varieties: regular, soft and firm. If you want a meat-like texture, choose firm varieties. If it is too bland for you, marinate it before cooking. Tofu is available in various flavours: smoked, spiced, or marinated. It can be used in making salad dressing patés and dips. A half cup of Tofu gives you 20 percent of your protein needs.
Tempeh
This is a meat substitute originating from Indonesia. Tempeh is nothing but cultured soybean cake. It has a unique flavour described as nutty and meaty. It is tender and sold usually frozen. It is a meat substitute that could be deep-fried, grilled, sautéed etc. Tempeh is high in fibre and contains calcium and vitamin B.
Seitan
Seitan originated from ancient China. It is also called “wheat gluten”. It is made from the dough used in making pasta. It is a staple in Buddhist vegetarian diets. It comes in slices or in vacuum packed jars. It tastes more like meat than other meat substitutes. It could be used in place of beef steaks and taste good if fried in olive oil.
Quorn
Quorn is made from mycoprotein derived from mushroom. It is grown using natural fermentation processes and combined later with egg white and vegetable flavours for texture and taste. This is not good for vegans because it contains egg white. It is perfect in place of minced beef. Quorn is low in fat and salt but high in fibre.
Easy to go vegetarian
It is now possible to have a good vegetarian diet. Only include vegetables and fruits in your diet and you have all the protein you need.
