Honey lemon chicken is a recipe that has a very delicate flavor. With its sweet and savor taste, this recipe is sure a delight to the taste buds. It is prepared in less than 40 minutes and makes for an excellent side dish. It is a favorite oriental dish and very popular in the south-Asian regions.
Honey lemon chicken can be eaten with an accompaniment of lots of vegetables. With very little use of oil and loaded with vegetables, this makes for a very healthy dish indeed. To make honey-lemon chicken, you need one onion, sliced, one cucumber, peeled and sliced, cupful of shredded lettuce, one capsicum, diced.
For the honey-lemon dressing, you will need two tablespoons of honey, juice of two lemons, salt to taste, ground pepper. A cupful of grated cheese is optional. It can be used for final garnishing. Chicken to be used should be boneless and tender. Ideally, use four chicken breasts, cut into large pieces.
Take two tablespoons of olive oil in a saucepan. Sauté onions till they turn transparent and appear baby-pink in color. Next add capsicum and sauté for 3 minutes. Now add shredded lettuce, cucumber pieces. Add salt and ground pepper powder to taste and turn of the gas. Cool and remove aside in an oven proof dish.
In another vessel, marinate chicken with half a juice of lemon for 30 minutes. Prepare a dressing using two tablespoons of honey and juice of one lemon. Apply this dressing to the chicken breasts and refrigerate for 15 minutes. Preheat the oven at 350 C or Gas mark 4 for 30 minutes. Remove the marinated chicken from the refrigerator.
Lightly brush with melted butter and roast in the oven for 30 minutes. Remove and serve on the bed of sautéed vegetables. If you wanted, you can grate cheese over the preparation and bake for another 10 minutes.
