Ingredients for Making Gujiyas
In order to prepare the outer cover of gujiyas you need about 500 grams of all purpose flour and six tablespoons of melted ghee. To make the filling you need 600 grams of khoya, one tablespoon each of dried coconut, raisins, cashew, and chopped almonds, half teaspoon of green cardamom powder, and 350 grams of sugar.
Steps to Prepare Gujiyas
Firstly you have to sieve the flour and combine the ghee with it. Use your fingers to mix well until the flour resembles breadcrumbs. Then you have to add some water. Gently knead the flour. The dough should be both tight and soft. Thus, add as much water as you need while kneading. Cover the dough with a moist cloth and keep it aside.
Prepare the Khoya Mixture
Take a bowl and gently mash the khoya in it. Fry the khoya in a deep pan or a wok until it becomes light brown. Stir in the cardamom powder and sugar into the khoya. Mix all the ingredients well and then add raisins cashews, almonds, and coconut. Stir fry for about two minutes and then keep it aside so that it cools.
Now you have to make small balls out of the dough. With the help of a rolling pin roll each ball to make a small round. It should have a diameter of about 4 inches. Place some khoya mixture on the small round and fold its. Turn the edges and seal the round piece of flour.
Repeat the process with all the rounds, ensuring that the gujiya mixture does not come out. Now deep dry the gujiyas in heated ghee over medium ghee. Fry until they become golden brown.
