There are some fruits, which taste very well even when cooked. Guava is one such. Guava pickle is an excellent sweet and savory recipe. It is very easy to make and can be prepared within minutes. This is often a favorite with chidren because of its spicy, fruity taste. Children will especially like this recipe because of its sweet and tangy taste. What’s more, if stored properly, it can even last for more than a week.
For this recipe, you will need two large guavas, a little oil, red chilly powder, sugar and salt for the recipe. If you do not have red chilly powder, you can even use ground pepper instead.
Cut the guavas into large cubes. You can de-seed these if you want. Heat oil in a heavy bottomed pan. If you have access to Indian spices like mustard seeds, cumin, turmeric powder and asafetida, you can even use these to make the guava pickle. When the oil is hot, first put in a tea spoonful of mustard seeds and let them cackle. Next add an equal quantity of cumin. Next add a pinch of ground asafetida and turmeric power. In case you do not have these spices, use ground pepper along with a few whole pepper cobs. You can also use butter instead of oil.
Next, add the diced guavas. Sauté well for 2-3 minutes and then cover for a minute or two. Now, remove the cover and add some water. Heat till the guava is soft and changed color. Now, add 3 tablespoons of sugar and salt to taste. The gravy should look syrupy and thick. Once you achieve this state, switch off the gas and cool. Once cool, add the juice of one lemon. Store in a clean, dry jar and refrigerate. This pickle can last for at least a week. It can be used to make sandwiches.
