Ingredients for the Cake
In order to make this cake you need one-third cup of hot water, half cup of cocoa powder, half cup of caster sugar, 2 teaspoons of boiling water, 2 teaspoons of instant coffee powder, 3 eggs, and 100 grams almond meal. You also need some melted dairy spread for greasing. Make sure that it is a low-fat version. Keep some sliced strawberries or apricots for garnishing.
Steps for Baking the Cake
Grease a baking pan with the dairy spread and preheat the oven to about 180°C. Next, you need to use non-stick baking paper for lining the base. The next step would be to take a medium bowl and add together hot water and cocoa powder in it. In a cup, you need to add boiling water and instant coffee powder.
Stir well and add it to the cocoa until you get a good mixture. Next you have to mix the egg yolks, sugar, and almond meal to the cocoa and stir well. Whip egg whites nicely in a bowl for some time. Now you need to mix this into the cocoa and combine well.
Once your cake mixture is ready decant it to the baking pan. Place it in a roasting pan, which is filled with sufficient quantity of boiling water. Next you have to bake the cake for about 45 minutes in the preheated oven. When the cake is cool, serve it with slices of fruit.
