The ingredients that you’ll need to make potato wedges yourself include 6 medium sized potatoes, 4-6 cloves of garlic (chopped), 6 tablespoons of olive oil, 1 teaspoon of mixed herbs, 2 tablespoons of lemon juice, ½ teaspoon of red chili powder, and salt to taste.
Step 1: First, wash the potatoes thoroughly. Remove bad spots, if any on the skins of the potatoes.
Step 2: Preheat the oven to 180°C.
Step 3: In the meantime, cut the potatoes into wedge shape, without removing the skins. You can do this by cutting a potato into half lengthwise. Thereafter, cut each half into halves or thirds, depending on the size of the potato and how thick you want your wedges to be.
Step 4: Now blanch the wedges in hot salted water, and drain them using a colander.
Step 5: Take the blanched potatoes in a bowl, and add garlic, red chili powder, mixed herbs, and salt to them. Pour in 4 tablespoons of olive oil and mix well. Add lemon juice and mix.
Step 6: Put the potato wedges on a greased baking dish or tray. Pour rest of the olive oil over them.
Step 7: Put the baking dish or tray in the preheated oven. Bake for about 15-20 minutes.
Step 8: Remove the potatoes from the oven once they’re done. Serve potato wedges hot in accompaniment with ketchup, mayonnaise, salsa, barbeque sauce, or anything you fancy.
