A dish low in cost yet wholesome, hash brown casserole makes great as a family meal or as side dish for parties. Creamy hash brown casserole with cheese topping sounds somewhat fancy, but it’s really very easy to make and tastes delicious too. Here’s a quick and simple recipe for homemade hash browns potato casserole with cheese.
Since most of us these days can’t afford to peel, dice and bake potatoes after a tiring day’s work, we’ve used the frozen version of hash brown potatoes to help you bake the casserole in a jiffy.
The ingredients that you’ll need to make hash brown potatoes at home include 1 bag of hash brown potato shreds (2 lbs), 1 large sized onion (yellow), 1 can good quality cream of celery soup, 1 can good quality cream of mushroom soup, 1 tablespoon of margarine, and 1/2 lb of grated colby cheese.
Step 1: Preheat the oven to 350 degrees F.
Step 2: In the meantime, grease a 9″ x 13″ baking dish with cooking spray or oil.
Step 3: Cut the yellow onion into ½ inch slices.
Step 4: Take a large mixing bowl and put the hash browns in it. Add the chopped onions, celery soup, mushroom soup, half of the colby cheese, and mix well.
Step 5: Now put the hash brown mixture into the greased baking dish (prepared in step 2) and spread evenly with the help of a spatula.
Step 6: Top the mixture with the remaining half of cheese, and spread evenly.
Step 7: Pour the melted margarine smoothly on top of the cheese.
Step 8: Place the baking dish in the preheated oven and bake for 40 minutes.
Step 9: Once the 40 minutes are over, check to see if the hash browns are done. To check for doneness, see if the cheese is nicely melted and just beginning to get crisp on top.
Step 10: Bake for an additional 5 minutes for a crispier top, and then remove from the oven. Serve the hash brown casserole as a side dish with pork chops.
