Karwa Chauth Recipes
Karwa Chauth is a very special and important festival of North India . Women observe a fast to seek God’s blessings for life of their husbands. At the end of the fast, they drink water and eat sweets from the hands of their husbands. Let us learn about some Karwa Chauth Recipes.
Dum Aloo:
Ingredients:
Small Potatoes – 500 gms
Onion – 1
Ginger Garlic paste – 1 tsp
Cinnamon- 1 small piece
Asafoetida – a pinch
Cumin Seeds – ½ tsp
Coriander seeds – 1 tsp
Caraway Seeds - ¼ tsp
Turmeric Powder – ½ tsp
Chili powder – ½ tsp
Cardamom – 2
Curd – 2 cups
Cloves – 4
Bay Leaves – 4
Black Pepper - 6
Salt to taste
Ghee or oil
½ cup milk
Method:
Peel and prick potatoes. Fry them until they become golden brown. Keep them at a side. Make a fine powder of cardamoms, coriander seeds, cloves, black pepper, caraway seeds, and cinnamon. Take a pan and heat ghee. Fry grated onion, ginger garlic, bay leaves, asafoetida until the whole thing becomes golden brown. Now pour all the ground spices in it and cook for few minutes. Add rest of the spices. Now add milk and curd but keep stirring continuously. Now put fried potatoes in this gravy and cover for 10 minutes. Garnish with coriander.
Fried Bhindi:
Ingredients:
Ladyfingers – ½ kg
Green Chili Paste – 1 tsp
Scraped Coconut – 1 tbsp
Coriander Powder – 1 tbsp
Chaat Masala – 1 tsp
Dry Mango Powder - 1 tsp
Salt to taste
Coriander leaves – ¼ cup
Oil to fry
Method:
First wash, clean and wipe ladyfingers. Deep fry ladyfingers and drain on a paper towel. Heat little oil in a frying pan and add green chilies, coriander powder, and scraped coconut. Cook it for 2-3 minutes and then add ladyfingers, mango powder, chaat masala and salt. Garnish with coriander leaves.
Palak Paneer:
Ingredients:
Fresh Spinach (Palak) leaves- 500 gms
Paneer – 100 gms
Grated Onions – 2
Ginger and garlic paste – 1 tsp
Cumin Powder – 1 tsp
Red Chili Powder – ½ tsp
Garam Masala – 1 tsp
Pure Ghee – 1 tsp
Oil – 5-6 tbsp
Method:
Wash, clean palak and boil it. After that, mash it. Heat oil in a pan and stir fry ginger garlic paste. Then stir fry onion till golden brown. Pour all the spices and pour little water. Add palak and paneer cubes to it. Cook it for few more minutes.
