Holi Recipes

Holi is the festival of fun and revelry. Holi is the time to eat, eat and eat. There are many yummy traditional dishes which are prepared on Holi. Gujia, thandai, Dahi-Vade, Kaji-vade are all time favorite dishes prepared on holi.

Gujia

Gujia is the most popular Holi dish. To prepare this, you will need

Maida- ½ kg

Khoya- 1 kg

Almonds (finely chopped)- 200 gms

Raisins – 3 tbsp

Water – 200 ml

Sugar – ½ kg

Cooking oil- 6 tbsp

More cooking oil for deep frying

Method:

Sieve flour and add 6 tbsp oil to it and mash properly. Knead soft dough by using water. Cover it with wet cloth and set an aside for some time. Take khoya and fry it until light brown. Add sugar, almonds and raisins to it; mix it well and remove from fire. After this mixture cools, start rolling dough in small and thick chapatti. Fill half chapatti with mixture and fold it and seal it by twisting the edges. Deep fry them on a low flame until it is golden brown. Drain oil from Gujiya and take it out of the pan.

Thandai:

Water – 1 ½ ltrs

Sugar- 1 ½ cup

Milk- 1 cup

Almonds – 1 tbsp

Poppy Seeds – ½ tbsp

Saunf (Aniseed) – ½ tbsp

Cardamon powder – 2 tsp

Peppercorn whole – 1 tsp

Peeled watermelon seeds- 1tbsp

Fresh or dried rose petals – ¼ cup

Method :

Wash and clean all the dry ingredients and soak in 2 cups of water, for at least 2 hours. Take ½ ltr water and soak sugar in it. Then grind all the soaked contents into a fine paste. Add all the sugar and water in it and mix well. Then, take muslin clothe and strain this mixture, to extract all the liquid content into a deep vessel. Now mix milk and rosewater. Serve it chilled.

Vegetable Pakoras

These hot vegetable Pakoras are everybody’s favorite. To prepare them, you will need,

Gram Flour (Besan) – 1 cup

Water – ½ cup

Oil – 2 tbsp

Salt to taste

Ground Cumin- 1 tsp

Chopped Green Chilies

Vegetables- Potato, cauliflower, cabbage, Spinach and onion (All sliced)

Method:

Mix besan, salt, green chilies, ground cumin, oil, water and beat it well to make a fluffier batter. Keep it aside for ½ an hour. Add vegetables and mix evenly. Deep fry these vegetables. Take out these pakoras on a paper towel and serve hot.
