Modak (Steamed Dessert Dumplings)
Ingredients
Rice Flour – 3 Cups
Sugar – 2 Cups
Water – 6 Cups
Oil – 3 tsp
Grated Coconut – 4 Cups
Chopped Dry Fruits – ½ cup
Milk – ½ cup
Method:
Preparing dough
First add oil to water and boil it. Add rice flour to it and let it cool. When still warm, knead dough and keep aside.
Prepare Stuffing
Mix dry fruits, coconut and sugar. Heat this mixture on a medium flame and keep stirring it for some time. Then add milk to it and put off the fire.
Prepare Dumplings
Divide the dough in small balls and make a hollow in the centre. Pour that mixture in this hollow and bind the dumpling in the shape of whole garlic. Steam these dumplings on using a steam cooker for about 10 minutes.
Moong Dal Ka Halwa
Ingredients
Soaked Moong Dal – 1 ½ cups
Mawa ( Crushed) – ¾ cups
Sugar – 1 cup
Milk – 1 ½ ltr
Saffron (Soaked in milk) – ½ tsp
Ghee – 6 tbsp
Cardamom (powdered) – 3 -5
Method:
Grind the soaked dal but not finely; coarsely. Take a thick bottomed pan and pour ghee in it. Fry dal till it becomes golden brown. Then add milk and stir till dries. After that, add mawa to it. Prepare sugar syrup of one thread consistency and add to the fried dal mixture. Add cardamom powder and saffron. Add chopped dry fruits to it.
Puran Poli
Ingredients
Maida – 1 Cup
Ghee – 1 tsp
Turmeric Powder – 1 pinch
Salt – a pinch
Oil- 6 tbsp
Water to knead
Stuffing:
Jaggery – 1 ½ cup
Bengal Gram Dal – 1 ¼ cup
Cardamom Powder – ¼ tsp
Method
Mix spices and ghee with maida and prepare soft dough. Cover it with a damp cloth which keeps it soft. After some time knead it again with 6 tbsp oil to make it softer. Leave it for 4 hours. Boil dal in pressure cooker till pone whistle. Take it out and cool. Then grind it to a paste with cardamom and jaggery. Make sure that filling is dry. Divide the filling material into small balls. Make small balls of dough also and flatten them. Put filling balls in that dough disks and seal that. Make thick puris of it very carefully. Shallow fry it over tawa from both sides.
