Peanut Butter Cookies are the traditional cookies made in traditional homes on the festive occasions. You must be having memories of Peanut Butter Cookies made by your Grandma; that lingering aroma of freshly baked cookies. You must have seen cookies with fork impressions cooling on the wire rack on window sill. You can have many variations in traditional peanut cookies. Commercial peanut butter has hydrogenated oil, corn syrup and sugar as its ingredients. While natural peanut butter is made up of peanuts only. Natural peanut butter is drier which will give crumbly cookies and less sweet cookies. Peanut butter is naturally salty so if you wish add just ¼ tsp of salt in your batter. Just follow given recipe to make delicious peanut butter cookies. This yields about 24-30 cookies.
Ingredients:
- Sifted All-Purpose flour – 1 ½ Cups
- Small egg – 2
- Baking Soda – ¾ tsp
- Butter (at Room Temperature) – ½ cup
- Peanut butter ( Creamy or Chunky) – 1 ½ cup
- Brown Sugar(firmly packed) – ½ cup
- Granulated sugar – ½ cup
- Chopped Peanut s( Optional) – ½ cup
- Granulated Sugar – ½ cup (for rolling)
- Vanilla extract – 2 tsp
How to Prepare Peanut butter Cookies:
Set oven for preheating at 350 degrees F.
Prepare two cookie sheets for baking by spraying with vegetable shortening.
Sift together flour, baking powder and salt (optional) and set aside.
Beat butter in a large mixing bowl using an electric blender with paddle attachment. Beat it until creamy.
Now beat in brown and granulated sugar until fluffy and light. Scrape bowl and now beat in peanut butter, eggs and vanilla until fluffy. Scrape the bowl again.
Now fold in flour mixture and gradually mix it.
Add peanuts if you want.
Use a cookie scoop or spoon to have a tablespoon size of dough balls.
Roll them in sugar and place these cookies on the baking sheet. Press them lightly with your fingers.
Make a criss-cross pattern using forks.
Bake these cookies for 10-12 minutes only until the edges are lightly brown. Take them out and let them cool on wire rack.
