This Easter recipe is favorite of children as they love to eat jelly beans in any form.
Let us see how to prepare this delicious Easter cookie.
Ingredients:
- Flour – 3 Cups
- Jelly beans – 13 ounces
- Baking Powder – 2 tsp
- Unsalted butter – 4 tbsp
- Granulated Sugar – 1 cup
- Salt – ½ tsp
- Large Eggs – 4
- Sanding Sugar – ¼ cup
- Vanilla – 2 tsp
How to Prepare Jelly Beans Biscotti Cookie Recipe:
Take a large bowl and pour in it sugar and butter and mix them either by hand or an electric mixer. Beat it until it is fluffy and light.
Now add three eggs, one at a time and beat the mixture well to incorporate it.
Add vanilla extract and beat it too.
Sift flour, salt and baking powder to mix them thoroughly. Add this mixture to the butter-sugar mixture and fold in slowly. Beat it until the mixture is light and fluffy.
Now stir in jelly beans and see that the dough is sticky and soft.
Sprinkle flour on the rolling plate and lay the dough on to it. Divide this into two halves, using the spatula. Take one half and roll forth and back and make a rope like structure. Pick and place this on the paper-lined cookie sheet.
If it is disfigured while you are picking it up, you can shape it on the cookie sheet also. Repeat the same procedure with second half.
Using your palm, flatten dough lightly. Take last egg and beat it in bowl. Coat this egg on the cookie surface using a brush.
Bake this cookie dough in a preheated oven at 325 degree F for about 25 minutes.
When it is baked, let it cool for 15-20 minutes, so that you can handle it.
Then place them on a flat surface and cut diagonally in about 3/4 “slices.
Place them back on the cookie sheet and bake for another 10 minutes until edges are light brown.
Remove from oven to a wire rack to let it cool.
