Ingredients:
- Dried Apricots – 2/3 Cup
- Sifted Flour – 1/3 cup
- Sifted Flour – 1 Cup
- Granulated Sugar – ¼ Cup
- Soft Butter or margarine (at room temperature)– ½ cup
- Baking Powder – ½ tsp
- Salt – ¼ tsp
- Eggs (Well Beaten) –2
- Brown Sugar – 1 cup
- Vanilla - ½ tsp
- Chopped Walnut – ½ cup
- Confections’ sugar (optional)
How to Prepare Apricot Square Cookies:
Set the oven for preheating at 350 degrees F
Take an 8x8x2 inches baking pan and grease it to prepare for baking.
Take the dried apricots, rinse and soak them in water in a saucepan and boil for about 10 minutes. Drain and let it cool. Then chop it in small pieces.
Take a large mixing bowl and pour 1 cup flour, granulated sugar and butter and mix until it is crumbly.
Put the crust in the baking pan and bake for about 25 minutes until it is light brown in color.
Take a small bowl and sift together 1/3 cup flour, salt and baking powder.
In another bowl, beat eggs and add brown sugar to it gradually. Blend them very well until fluffy.
Now fold the flour mixture in egg mixture but do it gradually.
Now add to it vanilla, chopped apricots, chopped nuts and mix them well.
Now take the baking pan and spread this prepared batter over the baked crust layer. Make sure that crust is entirely covered.
Bake it for about 30 minutes.
Let it cool completely in the pan before cutting the cookies.
Cut and roll these cookies in confectioners’ sugar.
