Potatoes have a long and colorful place in the history books. Potatoes have been used to sustain people during times of famine. Diseased potatoes caused large amounts of the Irish to leave their homeland and flee to the United States.

One of the reasons this simple, plain looking vegetable has been such an important part of the world’s history is because it’s such a versatile food. Potatoes are the main ingredient in most chips, French fries and tater tots. The second reason that potatoes have successfully survived history is because they are a powerful supply of nutrition. One medium sized potato is loaded with potassium, several different vitamins, starch, fiber, copper and manganese.
Vitamin B6
Potatoes are an excellent source of Vitamin B6. Vitamin B6 is one of the best understood of all the B vitamins and it’s also the most versatile. The main purpose of Vitamin B6 is to help our digestive system convert carbohydrates into simple sugars. People who don’t eat enough of the B6 vitamin are more susceptible to anemia, skin diseases, fatigue and seizures. The B6 found in potatoes will help maintain your cardiovascular system, decreasing epileptic seizures and help prevent carpel tunnel. People who get plenty of Vitamin B6 are less likely to become alcoholics.

Potatoes are full of potassium which is a vital part of maintaining a person’s circulatory health. People who consume baked, mashed and boiled potatoes are less likely to have a heart attack and usually have lower blood pressure than people who don’t eat potatoes. Eating potatoes make it easier for diabetics to control their blood sugar levels.
