Makai Ki Roti Aur Sarson Ka Saag

Punjab is northern state of India. It is very popular for its rich food. Punjabi recipe is prepared in delicious gravy and Punjabi parathas melted in butter/ ghee. Punjabi dishes are simple, healthy and yet has its own fascination. The famous dishes like matar paneer, dal makhani, parathas, bature, lassi are popular all over India. Following are few gems of Punjabi cooking, hope you will like them.

Makai Ki Roti

Ingredients
11/2 cups of corn meal
¼ cup of whole wheat flour
Salt to taste
6 tsp butter

Preparation method
Take a huge bowl.
Mix corn meal and whole wheat meal along with salt.
Mix the sufficient amount of water to make soft dough.
Make 10 small and equal balls of dough.
Wet your hands and put each dough ball on a wet polythene sheet and press with either your hand or you can use disk to make the roti flat.
Put the tawa on the flame and add little oil to the tawa, carefully put roti on the tawa.
Apply oil to the corners of the roti and stir on the medium flame.
Change the side of chapatti and again apply oil and stir until it turns deep yellow color.
Spray butter on the rotis and serve hot with sarson ka saag.

Sarson Ka Saag

Ingredients
500gms Mustard leaves
200gms Spinach
3 Garlic cloves
2 tbsp Ghee
Salt To Taste
1 Pinch Onions
200gms Bathuwa
1 inch Ginger
2 Green chili
1 tbsp Maize flour
1 Pinch Sugar
1 Pinch Turmeric powder
1 tsp chopped Red chili powder
1 Asafetida

Preparation Method
Chop the sarson, bathuwa and spinach.
Wash them in 3-4 water.
Boil the three with garlic, ginger and chilies.
Grind the boiled material well.
Take a deep pan and heat the ghee in it.
Add hing and onions, fry the onions until brown.
Add salt and turmeric powder.
Mix thoroughly.
Add the paste to the mixture and put on the medium flame.
Add the remaining ingredients, mix well and stir for few minutes.
Serve with makai ki roti.
You can season the both in desirable manner.
