How Good Is A Diet Based On Corn Or Maize?
Corn, also called Maize by the American Indians is the main food in many parts of the world such as Asia, Africa, some parts of the Soviet Union and Latin America.
Maize or Corn just means ‘that which sustains life’ and this indicates the importance of this food.
Maize As An Important Staple Food:
People in these countries have maize as their daily food with different specialized recipes. For example, in Africa, people cook ground Maize and thereafter, make a paste of it, which is then consumed while it is hot, along with some alcohol.
Some people make bread out of Maize. Tortillas are also prepared out of the Maize. Not to stop with this, it is used as a food for livestock, and is also used in the preparation of many non-edible materials.
This crop is so popular that most the population in the world is dependent upon Maize and America alone produces nearly 40% of the global Maize output. Popcorn is one of the most popular food made from corn and is liked by many.
Types Of Maize:
Experts classify Maize into six different categories. The grouping is made depending on the Kernel’s characteristic . Dent corn is one of the varieties. The next variety is Sweet corn. In fact, farmers in the USA mostly grow these two varieties. Indian corn and flour corn are the other popular varieties of Maize.
Vitamins Contained In Maize
Maize is rich in Carbohydrates, Protein, Vitamin ‘B’ and Minerals. Experts say that Maize has more nutrients as compared to other cereals. Another interesting point is that the amino acids in the proteins are greatly enhanced by the germ, which is in the kernel of the Maize.
The germ provides oil, Vitamins, Sugar and minerals to the kernel. If there were no germ, the maize would have been deficient in amino acids contents of the proteins.
Recent Innovations:
However, researchers have found that two amino acids viz. lysine and tryptophan are deficient in Maize. This prompted them to develop the QPM variety in an attempt to provide good protein.
The QPM variety provides 18% more proteins. However, this variety has one drawback – it is more susceptible to insects. At the same time, the QPM variety of maize is deficient in lysine; and the result is an imbalance of amino acids.
