Egg White vs. Egg Yolk

October 8, 2009

eggwhiteandyellowAre eggs a reason for high cholesterol? Which is more nutritious – egg white or yolk? What is salmonella? Should we be worried of the salmonella bacterium? Here are the answers to your doubts.

First we need to check if the egg is fresh. To do that, put the egg in a big cup of water. A fresh egg will sink and touch the bottom whereas an old egg will float.

This is because the size of the air pocket in the egg increases as it becomes older. Salmonella is not some kind of poison, it’s a disease which hens have and it can be passed to the eggs before the formation of the shell.

It’s just not possible to say if the egg is infected with salmonella just by looking at it. Therefore, the best way is to cook the eggs well before consuming them. By cooking, the bacteria are destroyed. Salmonella bacterium is dangerous for children, pregnant women, older people and people who have very low immunity.

Here are some ways you can protect yourself from the salmonella bacteria. Check the date on which egg was packed, avoid eggs that are cracked, store the eggs so that the pointed end is down.

People who are at the risk of catching the bacteria should avoid consuming raw eggs, eat dishes made with eggs immediately or store them in the refrigerator and most important of all, do not forget to check the freshness of the egg.

An egg contains about 6gms protein. This is approximately fifteen percentage of the daily suggested protein level for a grown-up. Eggs also contain Vitamins D, B and E, phosphorous and calcium. The calorie content of an egg is about 75.

This is what happens when the white is separated from the yolk. The egg yolk has 59 calories and the white has a protein content of 3.5gms. The yolk has around 5gms fat. The white has no fat content in it.  This is why egg whites are more nutritious than the yolk.

Egg yolk has cholesterol in it. Recently a research from a New York University showed that consumption of eggs increased the cholesterol level only in two out of five people.

If you’re worried about your cholesterol level, then have egg white instead of yolk. Similarly, egg whites can be used instead of the whole egg while baking. For instance, if you need two whole eggs you can use three egg whites and one full egg instead. Powdered or frozen egg whites can be used for cooking instead of whole eggs.
