Easy Sugar Free Valentine Cookie Recipe
People who have a sweet tooth are blessed ones, who can enjoy some of the most delightful desserts of the world, cookies, pastries, cakes, soufflés, sweets etc., the list is endless. What about those who are not so lucky and are bound by diabetes.
For them thinking about all these delicacies is crime. But there is a way to steer clear away from sugar and still make some really mouth watering cookies and present them to your grandma and grandpa also if you are in love and the valentine day is nearing you can express your love with a box full of heart shaped cookies! Not only the delicate cookies melt his heart, it will melt in his mouth too. The very idea is exciting…so let’s start.
½ cup of any shortening* product (found in the market)
3 table spoons of artificial sweetener (sugar free)
2 ½ cup of plain flour
2 egg yolks
½ teaspoon salt
½ cup milk (preferably skimmed milk)
1 table spoon vanilla essence
Cookie cutters (in heart shape rolling pin)
Tray to bake
*What is shortening? Shortening is something like butter, lard, margarine; in short any type of fat that is used to make crust and dough.
To begin with, mix the shortening, the egg and the artificial sweetener in a bowl and blend it very well, with hand mixer. Take a separate bowl and mix together the flour, salt and the baking powder.
Now add the milk, vanilla essence and the water to the mixture of the egg, artificial sweetener and the shortening. Blend well. Next put all the ingredients in a bowl and mix them very well to make dough out of it. You have to refrigerate this dough to make it firm. For this you have to keep the dough in the refrigerator for about 2 ½ to 3 hours.
Take out the dough when it’s time. Roll out the dough with the help of a rolling pin, on a flat surface, after sprinkling little flour, so that the dough does not get stuck to the surface. The rolled out dough should be around 2 inches thick. Cut out shapes that of heart with the help of the cookie cutters and place the dough on the baking tray one by one, keeping a distance of about 2 inches in between the dough.
In a separate bowl break and just take out the egg yolks and add the food colors to the yolks and blend them very well. With the help of a food brush, apply the mixture on the top of the cut out cookies dough’s, prior to baking them. Preheat the oven and put the tray inside the oven and let the cookies get baked at 325 degree C for about 10-12 minutes. Take them out when done and let them cool in the wire rack.
Temperature controlling part varies from oven to oven. Be careful to check occasionally, so that your cookies aren’t over baked or burnt. Now, enjoy this delicious cookie.
