Naturally ripened purple/black appearing olives contain anthocyanins. This does not include artificially ripened “black olives” that are typically found in cans. Olives are used in different culinary disciplines: in cocktails it is an essential accessory of the martini; in sausages, it may be used in mortadella and so on. It is commonly used in breads as well and very much used in pizza toppings.

Olives are very much famous because olive oil is extracted from them. There are numerous benefits of olive oil. The greatest proponent of monounsaturated fat is olive oil, and it is a prime component of the Mediterranean Diet. Olive oil is a natural juice which preserves the taste, aroma, vitamins and properties of the olive fruit. Olive oil is the only vegetable oil that can be consumed as it is – freshly pressed from the fruit. Olive oil is very well tolerated by the stomach. In fact, olive oil’s protective function has a beneficial effect on ulcers and gastritis. Olive oil activates the secretion of bile and pancreatic hormones much more naturally than prescribed drugs. Consequently, it lowers the incidence of gallstone formation.

Olive oil plays an important role in fetal development during pregnancy. If women consume olive oil during pregnancy, they give birth to children better in terms of height, weight performance and psychomotor reflexes. Olive oil plays an important role in the prevention of continuous oxidation, one of the processes that influence the development of skin cancer. It also helps in maintaining metabolism and contributes to the development of the brain and bones in children. It is also suggested as a source of vitamin E for older people. Olive oil also acts like a natural anti-oxidant, which slows down the natural aging process.
